My favorite light lunch

If you’re having one of those days where you’re tired of eating heavy foods or ate too much over the weekend (happens to me all the time!), then this is the perfect lunch that you should definitely give a try. I just had it on inauguration day. It literally takes 3 minutes to make and is full of vitamins and nutrients (all coming from the avocado). It’s got vitamins B, E, and K, has tons of fiber and potassium and is rich in monosaturated fat (the good kind).
Ingredients
rice cakes
1 Hass avocado
salt to taste
red chili powder (optional)
Directions
Simply cut the avocado in slices and add on top of the rice cakes. Add some salt to taste. If you’re like my husband and like everything to be spicy, add some red chili powder. There you go, lunch is done!
