Cauliflower & Peas Curry
This is a great week-day recipe. Frozen cauliflower and peas make this super simple since there is hardly any cutting work required.
Ingredients
1/2 bag (1/2 lb) frozen cauliflower
1 cup of frozen peas
1 medium tomato
a few sprigs of chopped cilantro
3 teaspoons of garam masala
1/4 teaspoon of turmeric powder (haldi)
2 teaspoons of coriander powder (dhania powder)
1 teaspoons of cumin seeds (jeera)
1 teaspoon of chopped garlic
1 teaspoon of chopped ginger
red chili powder to taste
salt to taste
about 1.5 cups of water
2 tablespoons of extra virgin olive oil

Directions
Put the cauliflower and peas in a microwavable bowl and heat in the microwave for about 5 minutes on high. Chop up the ginger, garlic, cilantro, and tomato. Warm up the olive oil on medium heat and add the cumin seeds, ginger, and garlic. Sauté for about 1-2 minutes. Add the chopped tomato and sauté for another 2 minutes, until the tomato becomes soft. Add the turmeric powder, coriander powder, garam masala, and red chili powder. Mix and then add the microwaved cauliflower and peas, and half of the chopped cilantro. Add salt and water and let simmer for about 10 minutes, stirring occasionally. Remove from heat, add the remaining cilantro and serve immediately with some cooked rice.
Note: I added some leftover yellow bell pepper to the dish you see in the picture. Feel free to add any leftover veggies you have to add some extra color to this dish.
