Easy Cheese Samosas
Recipe courtesy of Varsha J Chawla.
These cheese samosas are extremely tasty and way better than the frozen ones. Pretty easy to make, too!
Ingredients (makes about 15-20 mini samosas)
1 package of spring roll wrappers
1 cup of shredded mozzarella cheese
1 cup of shredded parmesan cheese
1/2 cup of shredded paneer (found in Indian grocery stores, optional)
a few sprigs of chopped cilantro
1.5 teaspoons of crushed red pepper flakes
2 tablespoons of flour mixed with a little bit of water, to form a thick paste

Directions
Combine all ingredients in a bowl. Cut a sheet of egg roll wrap into three equally sized pieces. Pick up a strip and hold vertically. Fold one corner of a piece to the opposite (long) edge. This will form a small triangular pocket. Fold the pocket to the opposite edge (where you started) and fill with the cheese mixture. Continue wrapping around the triangle and “glue” shut with the flour-water mixture. Repeat. Fry in hot vegetable oil until golden brown, or bake in the oven on 350 degrees for about 30 minutes.
