Curried Tofu Stir Fry

Yes, it IS possible to make a curry stir fry! This is a very healthy dinner and is ready in no time!
Ingredients
1 packet of extra firm tofu, drained and cubed
1/2 red bell pepper
1/2 green bell pepper
1/2 medium red onion
1 medium tomato
a handful of cilantro, chopped
1/2 teaspoon grated ginger
1/2 teaspoon grated garlic
3 teaspoons curry powder
½ teaspoon cumin seeds
1/2 lime, juiced
2 tablespoons of olive oil
salt to taste
Directions
Cube the tofu and let sit on paper towels to absorb as much moisture as possible. Toss the cubed tofu with the lime juice and 2 teaspoons of curry powder. Shallow fry to tofu in olive oil until golden brown and set aside on a plate covered with paper towels. Coarsly chop the bell peppers, tomato, and onion, and grate the ginger and garlic, if you don’t have this on hand. Stir fry the bell peppers, tomato, onion, ginger, cumin seeds, and garlic on medium-high heat. Add 1 teaspoon of curry powder and salt to the stir fry. Continue stirring for about 6 minutes, adding a little bit of water to prevent the veggies from burning. Toss in the tofu and stir fry for 2 more minutes. Sprinkle cilantro on top. Serve warm with white rice.
