A super satisfying springtime salad! For those of you who don’t
like to measure things, this salad is mostly build “by the handfuls”.

Ingredients (for two people)

Mixed baby greens (arugula, romaine, spinach, etc.)
A handful of feta cheese
A handful of walnuts, shelled and coarsely chopped
Two handfuls of garlic flavored croutons
A handful of grilled chicken strips (optional)
3 tablespoons of olive oil
3 tablespoons of balsamic vinegar
1 roasted red pepper, chopped

Directions

Wash the greens and spread them out in one layer on a dry towel so they can
dry off. I ussed a roasted red pepper out of jar, but you can roast one yourself, too.
Chop the red pepper and set aside. Coarsely chop the walnuts next. Mix the olive oil and balsamic vinegar and set aside.

When the greens are dry, start building your salad onto a salad plate, or toss in a large bowl. Add the croutons last and drizzle with the olive oil-vinegar mixture.
