A very simple brunch or lunch dish. Habanero cheese is very spicy and is not sold everywhere, so if you don’t like much heat or can’t find it, substitute it with Pepper-Jack and add some crushed red pepper if desired.

Ingredients
(for about 6 quesadillas)

6 tortillas
4 cups of baby spinach, washed and dried
1 roasted red pepper, chopped
1.5 cups of grated Habanero or Pepper-Jack cheese
Some cooking spray

Directions

These quesadillas come out best when you grill them on a George Foreman, or other type of grill. If you don’t have a grill, you can also try making them in a panini maker, or regular cooking pan. Pre-heat your grill or pan, then chop the roasted red pepper and rate the cheese. Add spinach, red pepper, then cheese to each tortilla and fold in half. Add some cooking spray to the grill or pan and grill for about 6-7 minutes, until grill marks start to appear and tortillas start getting crispy. Turn over once, about halfway through the cooking time when grilling in a pan. Serve with your favorite salsa and / or some sour cream.
