This is a great meal to cook in one pan (ok, two if you count the pot you boil this in, but clean-up for that one should be minimal :-) ). It’s
pretty quick to prepare and is always satisfying. You can add more tomato sauce if you want this to be saucier. Give it a try!

Cheese Tortellini

Ingredients (for two to three people)

2 1/2 cups of tri-color cheese tortellini (I usually buy mine at Trader Joe’s)
1 medium zucchini, chopped
1 large tomato, chopped
1/4 cup of whipping cream or half & half
1/2 cup of tomato sauce
1 teaspoon of oregano
1/2 teaspoon of garlic powder
A handful of fresh basil, chopped
3 tablespoons of olive oil
Salt and black pepper to taste

Directions

Boil the cheese torellini according to directions. Drain and set aside. Set half the basil aside as well (to be used as garnishment). Saute the tomato, zucchini and spices in olive oil for about 6-7 minutes or until zucchini starts to soften. Add in the tomato sauce and whipping cream and mix together with veggies and spices. Add in the cheese tortellini and toss together with the mix. Cook for about 3-4 minutes. Take the pan off the stove and top the dish with fresh basil.
