Rosemary-Garlic Roasted Potatoes
A wonderful side-dish that goes great with roasted meats or veggies!
Ingredients (for two people)
About 6 to 8 small, red-skinned potatoes, thinly sliced
1 1/2 tablespoons of olive oil
1 1/2 teaspoons of sea salt
4-5 sprigs of fresh rosemary, chopped
3-4 cloves of garlic, finely chopped
Black pepper to taste
Directions
Pre-heat your oven to 375 degrees. Slice the potatoes and toss with the remaining ingredients. Lightly spray a foil-lined baking pan with cooking spray so that the potatoes won’t stick. Put in the oven and bake for about 35-40 minutes, or until potatoes are fork tender. Enjoy!
