Hearty Stuffed Peppers
The great thing about this dish is that you can make it with ground turkey, beef, chicken, or soy crumbles without having to change the rest of the recipe and adding just a few more minutes for certain meats to cook through. This goes great with pastas or with Orzo or Rissotto. I made this dish with Morningstar Farms soy crumbles (one of my favorite Morningstar Farms products!). Since not everyone is familier with Boursin cheese: this is a soft, French herbed gournay cheese. It’s available at many grocery stores and gives this dish a nice, creamy touch.
Ingredients (for two people)
3 large sweet peppers, green or red
3 cups of ground turkey, beef, chicken, or soy crumbles
1 medium tomato, chopped
1 cup of fresh basil leaves, chopped
1/2 red onion, chopped
2 tablespoons of Boursin cheese
2 tablespoons of olive oil
1 tablespoon of Italian seasoning
1 teaspoon of garlic powder
1 teaspoon of organo
1 teaspoon of crushed red pepper
Cooking spray
Salt to taste

Directions
Chop up veggies and slice peppers in half, lenghtwise. It doesn’t matter if the two halves become separated. Preheat your oven to 350. Warm up the olive oil in a skillet and the ground meat or soy, together with the red onion and tomato. Saute for a few minutes until the meat / soy starts to brown. Add remaining ingredients, but only half a cup of chopped basil leaves. Keep the peppers aside. Saute for about 4 more minutes. Spray an oven-safe dish with cooking spray and place the peppers in there, with the insides facing up. Scoop the meat / soy mixture into the pepper halves and bake in the oven on 350 degrees for about 20-25 minutes. Take out of the oven and garnish with the remaining basil.
