Chipotle Chicken Tacos
One of my favorite ways to make tacos with spicy pulled chicken breast!
Ingredients
For the chicken
2 whole chicken breasts
2 tablespoon of crushed chipotle peppers in Adobo sauce
4 tablespoons of tomato paste
1 lime, juiced
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
2 tablespoons of extra virgin olive oil

A few slices of bread (Publix Chicago-Italian bread works the best!)

Ok, so I cheated on this one and used Alton Brown’s Refrigerator Pie recipe, found here: http://www.foodnetwork.com/recipes/alton-brown/refrigerator-pie-recipe/index.html. Instead of his suggestions, I added some blanched asparagus, tomato-basil goat cheese, and crushed red pepper. The result was as good as it sounds!
